Default 160 T stat

What's up Fam. I just swapped out my Oem stat for a 160. Now my temperature is 10 degrees higher than it was with the 182 installed (203 on a 90 degree day) I have Ls1 fans. Is there a 100% way to know you have all the air out? I've had it on ramps with the radiator cap off, ran it to temperature 3X. Any helps would be appreciated.
